I'm sure our friends across the channel would baulk at the use of the word Champagne to describe this as it's not made from grapes from the Champagne region. In fact, it's not made from grapes at all but sugar, a bit of flavouring and lots of elderflowers.
It's got a delicious light floral flavour that seems to perfectly capture the essense of spring and it's an easy, forgiving introduction to the world of home brew.
There are loads of recipes around, but the one we use comes from Wild Food UK. Check it out at http://www.wildfooduk.com/articles/making-elderflower-champagne-the-easy-way/
Here in Bristol, the first elderflowers are out, so it's time to start picking and start brewing!
